Recipe: My coldraised weekend buns

I just love, making coldraised buns in the weekends for breakfast. It is fast and very easy to make, and tastes amazing


Recipe

Yield:  aprox. 10 buns

Ingredients:

  • 5 dl cold water
  • 20 grams of yeast
  • 4 tbsp of olive oil
  • Salt
  • 200 grams of ex. Graham flour or wholemeal flour
  • 400 grams of wheat flour
  • Ground cardamome (aprox. 1 tsp)

How to make it:

In the evening:

  • The dough has to be made the evening before 
  • Dissolve the yeast in water and add the rest of the ingredients
  • Mix it well
  • Cover with clingfilm and put in the fridge for the next morning/day

The morning after:

  • Preheat the oven to 200 degress – hot air
  • Make your hand wet, take some dough and place it on the baking sheet (with a baking paper on)
  • Brush with beaten eggs
  • Bake in the oven for aprox. 20 minutes

→ TIP:
I always use a kitchen machine to make my bread and buns. The dough becomes so much better, and you can let it knead the dough while you make other stuff 😉

→ TIP:
These buns are amazing with sea salt on top, and possibly some rosemary or thyme – So great to soup, lasagne or some other warm dish
