Recipe
Yield: 4 persons
Ingredients:
- 75 grams baby spinach
- 1 bag of sugar snaps (125 grams)
- 1 package of raspberries
- 1 bag/package of pine nuts
- 1 tbsp dark balsamic vinegar
- ½ tbsp olive oil
- 1 lime
- 1 tsp acacia honey
How to make it:
- Mix the dressing: Add oil, balsamic & honey to a glass/bottle/bowl
- Roll the lime (to release the juice), cut in half & add the juice from ½ lime
- Shake/stir the dressing very well (save for later use)
- Fry the pine nuts on a pan on low heat (keep an eye on them), until they have gotten a nice brown colour
- Wash the salad
- Wash the raspberries
- Wash the sugar snaps & cut in angled pieces
- Pour the salad in a bowl & mix it well with the dressing
* Leave in this bowl or add to a new serving dish - Sprinkle with raspberries & sugar snaps
- Finish with some delicious pine nuts
