Jeg er vild med thaimad & stir fry,
Det smager fantastisk og når man først har fået snittet sine grøntsager er det ret nemt at lave 🙂
Det skal jo forskellige grøntsager i en stir fry – Den må gerne være lidt sund 😉
Jeg bruger æg i denne stir fry .. Det smager super godt og giver et lille ekstra touch til retten.
Jeg vil også virkelig anbefale dig at købe et mandolinjern, hvis du ikke allerede har et – Det er meget brugbart i din madlavning, du kan lave utroligt tynde og lækre skiver og det er med til at gøre din forberedelse af madvarerne meget hurtigere.

Recipe
Yield: 4 persons
Ingredients:
Sauce:
- 4 tbsp soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp akacie honey
- 2 tsp sesame oil
- 1 lime (You need ½ – 1 whole lime)
Stir fry:
- 1 package of chicken breast (280 grams)
- 1 chili
- Sesame seeds
- 3 big carrots
- 1 broccoli
- 1 package of noodles
- 4 eggs
- 1 bundle of scallions (6)
- Sesame oil
- 2 cloves of garlic
How to make it:
Sauce:
- Mix all the ingredients for the sauce & put aside
Stir fry:
- Start by preparing the vegetables & add to bowls – This way it all will be much easier 🙂
- Wash the broccoli & cut in small bouqettes (add to a bowl)
- Wash the carrots, cut off the top & bottom and grate on a mandoline iron (julienne) – Add to a bowl
* This way, the carrots will be long pieces that are still thick (they are thin when they are grated)
If you don’t have a mandoline iron, then buy pre grated carrots (they are thicker than home grated carrots – 2 handfull) - Wash the scallions, peel of the outher layer & slice (store som of the green top for garnish). Add to the same bowl as the carrots
- Peel & chop the garlic – Add to a bowl
- Cut a chili in half slice it (½ chili with seed – Medium heat or 1 chili without seeds – no heat. Add to the bowl with garlic
- Dice the chicken and add to a bowl
- Crack your eggs & pour in a bowl
- Prepare the noodles as described on the package (normally 4 – 5 minutes)
Pour into a colander & wash with cold water - Heat up a wok or big/deep pan on high heat. It has to be really hot
* I will recommend a wok. I threw mine out long ago, and have never bought a new one – I wish I had .. It is a bit easier to work with - Add sesame oil to the wok/pan
- Add garlic & chili. Fry until the garlic is soft
- Add chicken & fry until the chicken has gotten some colour
- Take of the pan, and store in a bowl for later use
- Add a bit more sesame oil to the wok/pan
- Ass broccoli & fry for about 2 minutes
- Add carrots, scallions & sesame seeds. Fry for about 4 minutes
- Add eggs & stir until it all has become scrambled
- Add the chicken & mix it up
- Add the sauce & fry while you stir. Let the sauce evaporate
- Add the noodles – little by little
- Mix it all well & sprinkle with scallions (the green top) & sesame seeds
