I love cupcakes – So good ..
these cupcakes with raspberry & lime are so delicious and some of my favourite cupcakes ♥
Cupcakes with raspberry & lime are so easy to make & it’s up to you, if you want fresh or frozen raspberries in your cupcakes.
→ I always make my dough in a kitchen machine (except with scones), to knead the dough properly 🙂
You can get very nice bread, buns & cakes without a kitchen machine – But the kitchen machine makes it a bit more perfect, puffy & the baking a bit easier, as you don’t have to knead yourself 😉
Recipe
Yield: 24 cupcakes
Ingredients:
Frosting
- 225 grams soft butter
- 350 grams powdered sugar
- 25 ml lime juice
Muffins
- 200 grams of soft butter .. SOFT butter!
- 200 grams of cane sugar
- ½ – 1 tsp vanillapowder
- 4 eggs
- 150 grams of flour
- 1 tsp baking soda
- 2 lime – both juice & peel
- 200 grams of raspberries
- Topping: Freeze dried raspberry or lime peel
How to make it:
Frosting
- Use a kitchen machine or a bowl & a handmixer
- Add the soft butter – whip lightly
- Add powdered sugar, little by little while whipping – The butter should become white
- Add lime juice (little by little) while whipping
- If the mixture has been to thin, then add some more powdered sugar
Muffins
- Preheat the oven to 180 degrees
- If you use frozen berries, then take a bowl with theese out of the freezer now
- Whip butter and sugar until it is white and airy
- Add the eggs and whip very sharply for a while, so it is mixed well and are light and airy
- Add the flour and baking soda, whip it
- At last you add the lime juice & lime peel
- Pour the dough into muffin forms (filled 1/3)
- Add 2-3 raspberries in the middle of each cupcake
- Place in the oven, and bake for aprox. 25 minutes
- When the muffins are done, take them out of the oven and let them cool off
- Pour the frosting into a pippin bag
- When your cupcakes has cooled down, then decorate them with the frosting and sprinkle with freeze dried berries or/and lime peel
