I love to bake … And what I love even more, is to bake chriatmas cookies – So cosy! 🙂
My absolute favourite is raspberry cookies. I am making them every year, and they are amazing ♥
These got a little to big so i only got about 32 stk instead of 50 stk
Recipe
Antal: 50 – 55 cookies
Ingredienser:
- 400 grams of butter (soft)
- 360 grams of sugar
- 1 tsp vanilla powder
- 2 eggs
- 500 grams of flour
- 150 grams of almonds (Blended to almond flour) or almond flour
- Raspberry jam
How to make it:
- (If you are using whole almonds – Put them in hot water and let them lie there until the shell comes of – about 1 hour. when all of your almonds are white and without a shell you blend them to flour)
- Preheat the oven to 200 degress
- Mix sugar and vanillapowder
- Add the softened butter and mix it with the vanilla powder and sugar
- Add the eggs and mix it
- At last, add flour and almond flour
- Mix it all well
- Put the dough into a pipin bag, and use a ordinary size star tulle
- Spray out the dough into round wreaths (No hole in the middle), and make a hole in the middle of the cookie
- Add a lump of raspberry jam into each hole
- Bake the cookies for about 10 – 15 minutes
⇒ REMEMBER: to let the cookies cool, as they are very soft and can break when they are warm, because of the almond flour
