Actually I haven’t made potato soup for several years .. i don’t know why .. Beacause I really like it ♥
The weather has been pretty cold recently, and then you are more tempted to make stews & soups, so a while ago I decided to try a potato soup 🙂
It was the first time ever for my boyfriend to taste potato soup (whaaat?), and he loved it – Great!
I have also served it for my stepson, and he also loves it ♥
Recipe
Yield: 4 persons
Ingredients:
- 1 kg potatoes
- 2 big leeks
- Salt
- Pepper – Lots of pepper
Topping:
- 350 – 400 grams of diced bacon
- Fresh thyme
How to make it:
- Peel & dice the tomatoes
- Wash and cut the leek
- Put it all in a pot and fill it with water so it covers the vegetables
- Add salt and let it cook for aprox. 25 minutes or to the potatoes are very tender
- Pour some of the water out of the pot and put it aside
- Blend it all in a blender or with a hand blender directly in the put (I use a hand blender) Add some more of the water (you put aside) if the soup is to thick
- Fry bacon on a dry pan and garnish your soup with the bacon dices & thyme
