I made these delicious chocolate muffins forAlexanders 8th birthday. With nougat frosting they became very delicious cupcakes! ♥
I asked him if he wanted a traditional birthday cake or a cupcake tower. He chose exactly what I hoped for – The cupcake tower 😀 I thougt that it would be funny with a cake that was a bit different that normally.
I also made raspberry-lime cupcakes.
I placed all of the cupcakes in the tower and then decorated them with superhero figures in edible sugarpaper.
We were having a superhero birthday, so I bought a lot of superhero stuff 🙂
Recipe
Yield: Aprox. 20 cupcakes
Ingredients:

Muffins
- 250 grams of sugar
- 3 eggs
- 150 grams of butter
- 150 grams of flour
- 100 grams of dark chocolate
- 30 grams of unsweetened cocoapowder
- ½ tsp of vanillapowder
- 1 1/2 tsp of baking powder
- 2 dl milk
- Pinch of salt
Frosting
- 200 grams of butter
- 400 grams of powdered sugar
- 100 grams of soft nougat

How to make it

- Mix the vanillapowder with the sugar
- Add eggs & whip it to an airy mixture
- Chop the chocolate
- Melt the butter in a pot, and stir in the chopped chocolate- Stir until all of it is melted & mixed well together
- Pour the chocolate mixture into the egg mixture.
- Add milk & mix it together
- Add flour, cocoa, baking powder & salt. mix it well together
- Preheat the oven to 180 degrees
- Pour the dough into the muffinforms & bake for 12 – 15 minutes
Frosting:
- Pour 200 grams of soft butter into a bowl
- Add the soft nougat & whip it well together
- Use either a handmixer or a kitchenmachine
- Whip the butter & nougat, while you’re adding the powdered sugar – Little by little
- Continue until you have the stiff consisteny you wish
