A new version of my delicious cookies ♥
They are so good, and was really popular at our house 🙂
They taste so good – really!
Actually, I was going to make macadamia nut cookies (I just love macadamia nuts ♥)
But … Apparently you cannot buy macadamia nuts in any store here in Denmark anymore – argh!
I have to buy some on the internet, so that I finally can make my macadamia nut cookies..
These will have to do for now 😉
Recipe
Yield: 20 – 24 cookies
Ingredients:
- 270 grams of moscvado sugar
- 1 tsp vanillapowder
- 2 large eggs
- 250 grams of flour
- ½ tsp baking soda
- Salt
- 1 big tsp baking powder
- 100 grams white chocolate chips
- 80 grams of blanched almonds
- 1 orange
- 150 grams of soft butter
How to make it:
- Chop the almonds
- Grate the orange, on the fine side of the grater
- Mix eggs, muscvado sugar & vanilla powder well together – It has to become a light & airy mass
- Add flour, baking soda, baking powder & salt
- Mix it all well
- Add the soft butter, chocolate, akmonds & orange zest
- Mix it all well
- Put the bowl in the fridge until the dough has hardened a bit – then it it easier to handle
- Preheat the oven to 180 degrees
- Shape the dough into round balls and put them on a bakin plate (with baking paper on)
- make sure that there are enough space between the cookie balls, as each cookie will melt and become flat
- Bake in the oven for aprox. 10 minutes
- Take the cookies out of the oven and leave them for aprox. 5 minuttes, after this, you move them to a wire rack and let them cool all down
- Store in tightly closed box with baking sheet in between the cookie layers
