It tastes amazing & are just sweet, soft & healthy ♥
This autumn couscous salad is so delicious & very filling.
It is perfect just as it is or to a nice piece of meat – Maybe with side salad.
I love love the colours of this couscous salad. It is just so beautiful & it is true what they say ……. You do eat with the eyes too 😉
Recipe
Yield: 4 persons
Ingredients:
- 3 dl couscous
- 1 big courgette
- ½ hokkaido pumpkin
- 1 lime
- 1 big red onion
- 4 cloves of garlic
- 1 tsp dried chili flakes
- 1 big bundle of parsley
- 2 handfull of spinach
- Olive oil
How to make it:
- Prepare the couscous as described on the package & leave to cool
- Heat oil in a pot
- Wash & chop parsley & spinach. Add to a bowl & save for later
- Peel & finely chop the garlic
- Peel & finely dice the red onion
- Wash & finely dice courgette & hokkaido
- Sauté garlic, onion & chili flakes
- Add courgette & hokkaido. Fry until they starts to become soft
- Take of the heat & mix with couscous
- Add chopped parsley & spinach
- Roll the lime (to release the juice) & cut in half or quarters
- Squeeze the juice from ½ – 1 lime & add to the couscous
- Mix it well & serve
