I don’t know how it is where you live, but here in Denmark it is pretty hot these days, and therefore it is just the time for a delicious, light & fresh dish like this.
In this heat (Don’t misunderstand me .. I love the heat & the sun!), you don’t always want to sit down & eat a dish that is really heavy & warm – And therefore this dish is perfect!
It is light & fresh & it is also beautiful to serve – Well .. Don’t forget that you also eat with your eyes 😉
I just love falafel, and they are great in this bowl with other delicious veggies ♥
The dish doesn’t take long to make, and it taste great!
Recipe
Yield: 4 persons
Ingredients:
- 1 – 2 dl couscous
- 8 tomatoes
- 2 red onions
- 1 bag of spinach (aprox. 150 grams)
- 1000 gram sweet potatoes
- 2 pots of parsley
- 2 package of (frozen) falafel – Aprox. 20 falafels
- Ground sweet paprika
- Oliveoil
- Sea salt
Tzatziki:
- 200 grams of greek yoghurt
- 2-3 cloves of garlic
- 2/3 cucumber
How to make it:
Tzatziki:
- Cut the cucumber in half & take out the seeds
- Grate the cucumber, and make sure to get all of the water out of it, by squeezing the grated cucumber
- Press the garlics
- Mix greek yoghurt, cucumber & garlic
- Season with salt & pepper
Falafel bowl:
- Preheat the oven to 200 degress, hot air
- Peel & dice the sweet potatoes
- Put them in a freezing bag. Add ½ tsp sweet paprika, oil & salt
- Mix it well
- Pour out on a baking sheet, with baking paper on
- Put in the oven for about 20 – 30 minutes
- Put the frozen falafels on a baking sheet, with baking paper on & put in the oven – Aprox. 20 minutes
- Wash and dice the tomatoes
- Chop the parsley
- Wash & cut the spinach leaves
- Peel & cut the red onion into thin stripes (rainbow-like)
- Mix tomatoes & parsley – Add a bit olive oil
- Prepare the couscous, as described on the package
- Arrange it all in bowls and eat with tzatziki
