Winter is comming .. (totally Game of Thrones) ..
The weather is getting colder, and that means – Soup! Delicious hot soup ♥
I love soup. It tastes amazing, and you can make lots of different variations.
If you put all your love in the food you are making, then soups are filled with sparkling taste 🙂
This hokkaido soup is delicious, and Alexander – my stepson loved it.
The topping makes the soup extra great – both for the taste and the consistency. It is nice to have something to chew on too 🙂
Recipe
Yield: 4 persons
Ingredients:
- 1 hokkaido pumpkin
- 1 baked potato
- 2 carrots
- 1 yellow onion
- Olive oil
- 2 cloves of garlic
- ½ chili
- 6 cm garlic
- 1 lemon
- ½ tsp cumin
- ½ tsp ground coriander
- Salt & pepper
- Water
Topping:
- Apple
- Creme fraiche
- Pumpkin seeds
- Fresh thyme
How to make it
- Wash the pumpkin and cut it in half
- Remove the seed
- Dice the pumpkin (keep the peel on)
- Pour olive oil in a pot
- Add diced pumpkin
- Peel and dice the carrots & onion
- Peel and cut the garlic in half
- Peel & grate the ginger
- Cut the chili in half and remove the seeds
- Add all of the vegetable ti the pot
- Saute over medium heat (1-2 minutes)
- Pour on water, so it almost covers the vegetables
- Add the spices
- Put the lid on, and let it all simmer for 20 minutes
- When it is done, You remove the chili
- Blend the soup (in a blender or with hand mixer directly in the pot)
- If the soup are too thick, then add some extra water
- Season the soup with salt, pepper & lemon
- Top your soup with diced apple, pumpkin seeds, creme fraiche & fresh thyme
