Some time ago, all of us were out shopping – groceries & birthday present.
On the way back to the parking lot, we saw a big tre, filled with delicious elderberries ♥
The tree was standing in a garden, but, but some of the branches was hanging out of the fence 🙂
When Alexander saw that, he asked me if we could pick some, and maybe make some elderberry juice…
Ehmm .. well .. Why not?! Actually I had never tried to make elderberry juice before, but I will not decline a food challenge 😉
Especially not, when my stepson Alexander are interrested in us, makin new and delicious food – So! Of cause, we should make elderberry juice 🙂
I made a lot of delicious elderberry juice.. and, wow, it was vey popular at home! 2 days – and then it was gone.. haha ..
After this I have been asked several times, if I will make more elderberry juice 🙂
and I will – if we find some elderberries somewhere 🙂 I was really delicious! ♥ ♥
Elderberries are to be found in september – oktober, and it is great to drink both hot & cold.
Are elderberries healthy ?
Elderberry juice are really healthy – Don’t forget that!
Elderberries are filled with vitamin C, and are great for the immune system. So just drink lots of elderberry juice in the winter months, to strenghten your immune system 🙂
besides vitamin C, elderberries also contains:
Lots of antioxidants, vitamin A, vitamin E, potassium & zinc.
→ Remember not to eat raw elderberries .. It is not good for you!
Recipe
Yield: a bit more than 1 liter
Ingredients:
- 1 liter vof water
- 1 kg elderberries
- 3 sour apples
- 1 lemon
- 200 grams of cane sugar
How to make it:
- Take of all of the big stems of the elderberries and wash them
- Dice the apples
- Pour water, elderberries, sugar & apples in a pot
- Press the juice of your lemon, and add it to the pot
- bring it to a boil, and let it simmer for 30 minutes
- When it is done – Let it cool down
- When it is cold, you pour it all through a stainer
- Store in glass bottle in the fridge
⇒ TIP:
Juice can be stored in the fridge for 24-48 hours.. And not longer than 72 hours

Two things I learned from your post. That fruit is elderberry and apples go great together and that they are great way to support immune system. I will try it at home because it’s hard my husband gets to eat enough fruit. So I find this useful!
