I have been experimenting with Valrhona, Dulcey
Valrhona is making the best of the best chocolates in the world for baking, and this dulcey are absolutely amazing ♥
Wow .. It just melts on your tongue
Dulcey are a chocolate that is creamy & has a delicious taste of caramel.
It is really special.
I used the chocolate to make a delicious ice-cream cake.
It is the best ice cream I have ever tasted, and it deserves it’s very own blog post (sometime) Yum! ♥
I thought that a delicious brownie, would be greata for the ice cream – It fits very well.
Also there is fresh fruit, almond crunch & salted caramel on the ice-cream cake.
They loved it at home .. But! It should have stayed a bit longer in the fridge, than I let it.
Recipe
Yield: Aprox. 1 liter – 26 cm springform pan
Ingredients:
Brownie:
- 60 grams of flour
- 100 grams of butter
- 100 grams of dark chocolate (min. 70%)
- Vanilla powder
- 2 eggs
- 120 grams of sugar
- Salt
Ice cream:
- 6 pasteurized egg yolks
- 200 grams dulcey
- Vanilla pod
- 1 orange
- 6 dl milk
- 2 dl cream
- 150 grams of sugar
Salted caramel:
- 200 grams of sugar
- 45 grams of butter
- 125 ml cream
- Seasalt
Almond crunch:
- 100 grams of almonds
- 110 grams of sugar
Other: Blueberries
How to make it:
Brownie:
- Pre-heat the oven to 180 – 200 degress, ordinary heat
- Chop the chocolate
- Melt the butter at low heat & mix in the chopped chocolate. Stir it with a rubber spatula, until it is nice & smooth.
- Let it cool
- In a bowl, mix egg & sugar. Whip it light & airy
- Add flour & vanillapowder. Mix it
- When the butter/chocolate mixture is cold, then add it to the dough. Stir carefully with a rubber spatula.
- Put baking paper in the springform pan & pour the dough in
- Bake in the oven for aprox. 20 minutes
- Cool off
Ice cream:
- Shred the orange
- Pour milk & cream in a pot
- Add the vanillapowder and the lemon strips
- Warm it up, to the boiling point – then put it aside
- Whip egg yolks & sugar to it is light & fluffy
- Pour the milk & cream mixture into the egg mixture, while you stir it
- Put it all back in the pot, and set it on low/medium heat
- Let the mixture thicken – Remember to stir it (almost) all the time (do not let it boil)
- When it has thickened – cool it off
- Now .. Blend your berries with the juice of ½ lemon
- Blend it to a smooth mixture
- Strain your fruit mixture for unblended berries & seeds
- Mix carefully your blended fruit into the ice cream
- Pour your ice cream into the ice machine and run it (aprox. 1 hour)
- Eat it right away, or put it in a sealen container and freeze ir in the freezer
Salted caramel:
- heat up a pan – Low heat
- Add sugar & let it melt slowly
- When all the sugar has melted, you add the butter. Let it melt & stir it well
- Add cream
- Mix it all together & take of the heat
- Mix it all together & take of the heat (If you want it thicker, then continue stiring while simmering)
- Pour directly into a glass container & store in the fridge & or use right away
Almond crunch:
- Heat up a pan – High heat
- Pour on sugar & let it melt
- When most of the sugar has melted, then lower the heat
- When all the sugar has meltedm then add the almonds
- Mix it well & warm for some minutes
- Pour the almonds aout on a baking paper & let it cool
- When they are cold, then chop the almonds
Islagkage:
- When the brownie is cold, take it carefully out of the springform pan
- Put plastik wrapping inside. Round in all the edges & in the bottom
- Put the brownie carefully back in the springform pan
- Pour on the ice cream & close with plastic wrapping – Make sure to put the plastic wrap on the ice cream, there should be no air over the cake
- Put in the freezer, and freeze the cake for min. 12 hours
- After 12 hours – Take the cake out of the fridge, remove plastik wrapping and take the cake out of the springform pan. Decorate with salted caramel (from pipingbag), almond crunch & blueberries

I have halved the brownie recipe, compated to the one on the picture.
I think there was a bit to much brownie – The ice cream should be the star 🙂
