Yield: 10 buns
Ingredients:
- 5 dl water
- 1 tbsp acacia honey
- 20 grams of yeast
- 500 grams of wheat flour
- 300 grams of whole grain øland wheat flour
- 100 grams of walnuts
How to make it:
The evening before
- Coursley chop the walnuts
- In a bowl, add water, yeast & honey
- Stir the yeast, in the water until it has evaporated
- Add flour & salt
- Knead it very well
- Add the chopped walnuts
- Knead it well
- Cover the bowl with cling film and a kitchen towel & leave it to rest over night (on the kitchen table or in the fridge)
Next morning
- Pre heat the oven to 250 degrees, hot air (with the baking plate in the oven)
- Sprinkle flour on the kitchen table
- Pour the dough out on the table & assemble the dough a couple of times
- Cut the dough into 10 bits & roll each into balls with a round hand
- Place them on a bakingsheet, with baking paper on & strain some flour on top
- Put in the oven for 10 minutes (on the top rack) – Then turn down the heat to 200 degrees & bake for another 10 minutes (on the middle rack)
