Warm & delicious chicken soup. How great is that!
I love soup – And Alexander loves it too 🙂
My boyfriend – Peter, has his own opinion about soup, though.
He is so tired of getting soup for dinner, and he don’t think that soup is satiating (It is not man food! haha 😉 )
But surprise surprise … He loved this chicken soup 😀 Yay!
But .. You know .. A good old chicken soup always works 😉
This chicken soup is so tasty. The chicken has been cooked directly in the water of the soup, and with a lot of delicious vegetables in it too.
It isalso really good when you have a cold and are sick! ♥
Recipe
Antal: 4 – 6 personer
Ingredients:
- 1 chicken (preferably organic or free range)
- 3 yellow onions
- 10 big carrots
- 2 leek
- 1 celeriac
- 5 parsley roots
- 3 bay leaves
- 3 cloves of garlic
- 1 bunch parsley
- Water
- Salt & pepper
How to make it:
- Peel the garlics
- Peel the onions & cut them into quarters
- Peel & wash celeriac, carrots & parsley roots
- Cut the celeriac in half & dice one of the halfes in big bits
- Dice 5 carrots & 3 parsley roots in big bits
- Wash & clean the chicken – dry it with a paper towel
- Put the chicken in a pot, together with garlic, bay leaves, onions and the diced carrots, celeiac & parsley roots
- Pour water in the pot, so it covers the chicken & vegetables
- Let it simmer for 1 hour
- After 1 hour, take the chicken out of the pot and put it aside to cool down
- Let the rest of the water & vegetables in the pot, simmer for 30 minutes more
- The rest of the celeriac, carrots & parsley roots should now be finely diced in small bits & the leek washed & cut into rings
- When the vegetables has simmered for the 30 minutes, then throw away the vegetables (use a skimmer) and replace with the newly diced vegetables
- Let it simmer for 30 minutes, while you pick the meat of the chicken (all of it)
- After the 30 minutes, add the picked chicken meat to the soup
- If you need more water in the soup (as it could have evaporated) then just add some more now
- Seasin with salt & pepper and sprinkle with chopped parsley
Eat the soup with a delicious baguette
⇒ TIP:
If you are eating leftovers the following day, then just add some extra water mixed with some chicken bullion
