The red cabbage salad is great to add to the christmas table

But Danish christmas food are really fatty, and this salad fits perfectly into this:
A nice, fresh & sour salad is a perfect fit for this fatty food. Makes it a little bit lighter 🙂
The salad is also great for a nice piece of meat at an everyday dinner.
Recipe
Yield: 4 persons
Ingredients:
- 1 red cabbage (200 grams)
- 1 bundle of parsley
- 2 – 3 oranges
- 1 pomegranate (Aprox. 4 tbsp)
- 1 ½ tsp olive oil
- 1 ½ tsp dark balsamic
How to make it:
- Slice the red cabbage finely, put it in a bowl & weigh it
* Remove the outer leaves & cut of the stalk. Take of some leaves & put some on top of each other. Roll them together & then slice the roll very finely - Chop the parsley & add to the red cabbage
- Add olive oil & balsamic
- Mix it well
- Peel the pomegranate & remove the seeds
- Peel the oranges, peel of the white & divide them into wedges
* I cut/peel off the skin off - Mix the red cabbagesalad with pomegranate & orange wedges
