Recipe
Yield: 10 pancakes – For 4 persons
Ingredients:
Salad:
- 1 bag og curly kale (aprox. 200 gram)
- 1 cucumber
- 2 big tomatoes
- 1 little bag og field salad (75 grams)
- 4 big carrots (or a bag of pre cut/grated carrots)
- 1 bundle of scallions
Pancakes:
- 4 eggs
- 40 – 50 grams of curly kale * Use from the 200 – 250 grams bag, you have
- 210 grams of grahamflour
- 2 – 3 dl milk or plantmilk
- Salt
- Butter or olive oil (for frying)
Chicken:
- 650 grams of chicken breast
- 1 can of chopped tomatoes
- 2 tbsp tomato puré
- 1 big red onion
- 4 cloves of garlic
- 1 lemon
- 2 tbsp soy sauce
- Ground paprika (sweet or hot)
- Salt
How to make it:
Salad:
- Remove the outher layer of the scallions, cut of the ends and wash the scallions
- Wash all the other vegetables
- Chop the kale coursley & add to a serving bowl
- Add field salad
- Dice the cucumber & add to a serving bowl
- Peel the carrots, cut og the ends & grate the them coursley – Add to a serving bowl
- Dice the tomatoes & add to a serving bowl
Pancakes:
- Crack the eggs & stir with milk
- Wash the kale & add to a mini chopper/food processor together with some of the egg/milk mixture
- Blend/chop it & pour back in the bowl, with rest of the egg/milk mixture
- Add salt & flour
- Stir/whip it all well together
- Fry the pancakes on a warm pan with butter or oil
Chicken:
- Peel onion & garlic
- Dice garlic thinly & dice det red onion
- Roll the lemon (to release the juice) & then cut in half
- Remove the tendons & blood from the chicken
- Dice the chicken
- Heat up a pan & add some olive oil
- Add garlic & onion. Stir
- When the onions is soft, then add the chicken
- Fry indtil the chicken har gotten some colour
- Add chopped tomatoes, tomato puré, soy sauce & paprika
- Leave to sommer at low heat for aprox. 20 minutes
- Season with salt, pepper & lemon juice (aprox. 1/2 lemon)
- Add to a serving bowl
Serve the pancakes with all the vegetables in Bowls on the table & the chicken + 1/2 lemon to squeeze the juice into the pancakes
