Normally I don’t really like crunchy cookies, but some I really like.
Among the ones I like, there is these – Swedish ginger bread!
Yeah well … Maybe it sounds weird, that I love Swedish ginger bread, and not Danish or others …

I really think there is a huge difference. Swedish ginger bread are just much more spicy .. Christmassy-spicy! ♥
I am part Swedish & part danish, and therefore there will always be some Danish/Swedish thing, that I like more than the other.
These ginger breads are really delicious. Just remember to roll out the dough really thin – Much thinger than you would think, as they raise in the oven , and become to thick.
Recipe
Yield: 90 – 100 stk
Ingredients:
- 400 grams of flour
- 1 tsp baking soda
- 2 dl dark syrup
- ½ dl water
- 125 grams of butter
- 100 grams of sugar
- Pinch of salt
- 2 tbsp cinnamon
- 2 tbsp ground cloves
- 2 tbsp ground cardamom
- 1 tbsp ground ginger
- 1 tsp all spice
How to make it:
- Take out the butter from the fridge, so it becomes soft
- Pre heat the oven to 200 degrees
- Mix the soft butter with sugar & syrup (handmixer or kitchen machine)
- Add flour, baking soda, spices, salt & water
- Mix & knead it all well
- When it is kneaded & to a form dough, pack it in plastik wrap and store in the fridge for some hours
- Take the dough out of the fridge
- Sprinkle some flour on the table and on top of the dough (do this several times when you roll the dough) roll out the dough a bit with a roling pin
- Put the dough on a baking paper and roll it to it has become really thin
- If some dough are sticking out from the bakingpaper, then cut it of (store that for later)
- Cut out christmas figures of the dough with different cookie cutters
- When it is done – Remove remaining dough (Store remaing dough for later)
- Move the bakingpaper with the ginger bread over to the baking sheet
- Put in the oven for 8 minutes
- When they are done – Put the ginger bread on a ovengrid ot baking paper to cool
- Do the same procedure with all of the remaing dough you have stored, until nothing is left
