We haven’t really made tacos before – But one day I just got a really big craving for it…
We made it, and it was so delicious and nice. It is just great comford food ♥
After we tried it, I was thinking that maybe my stepson, Alexander would like tacos. I was so exited to see if he liked it or not – I just kinda stared at him while he was eating it haha.
He is a bit picky, but it has been so much better, beacuse I make so much variated food, food made from the ground and are telling him to at least try tasting everything.
Well .. He liked … No he loved the tacos, and now he often ask if we can have tacos for dinner 😉
Recipe
Yield: Aprox. 3 people
Ingredients:
- 2 packages of taco tubs
- 500 grams of ground beef
- 4 cloves of garlic
- 1 dl water
- 1 small can of tomato puré
- ½ tsp ground cilantro
- ½ tsp cumin
- 1 tsp ground paprika
- Salt & pepper
- ½ cucumber
- 1 big red onion
- 3 big tomatoes
- 1 corncob
- 1 romaine lettuce
- 1 bundle of parsley
- Grated cheddar cheese
- Creme fraiche
- 2 avocados
How to make it:
- Wash the vegetables
- Peel the cucumber, cut it in half & take out the seeds
- Slice the cucumber in long vertical strips and then dice it
- Dice the tomatoes
- Cook the corncob and cut the corn of it
- Peel and dice the red onion
- Slice the lettuce into small bits
- Chop the parsley/cilantro
- Mix it well
- Mash the avocados
- Now your salad is ready!
- Peel and chop the garlics finely
- Pour some oil on a pan and fry the garlic
- fAdd meat & fry it, until it’s brown
- Add the spices & 1 tbsp tomato puré
- Mix it well together
- Add 1 dl water
- Let it simmer until most of the water has dissolved
- Warm up the oven to 150 degrees
- Divide the cheese into each taco tub
- Put the taco tub in the oven until the cheese has melted
- When they are done you first put beef into each taco tub, then salad and you top it with creme fraiche & mashed avocado

My oppenion is that cilantro is the best choise here.
It has much more taste, and it is much more mexican 🙂 But my boyfriend does not like cilantro (like most people, sadly!) That’s why I use parsley (But I will soon try to switch it with cilantro instead 😉
