This is something, that we often make for dinner.
We just love tortilla wraps with chicken ♥
It is a great dish for every day dinner – It is fast & easy to make, it is healthy & delicious – Win Win! 🙂
These wraps are filled with delicious vegetables & green stuff, so that you & your children can be healthy, even in a stressed & hectic every day life.
You just have to fry the chicken & cut the lettuce & vegetables.
These tortilla wraps are also great for lunch, and both Alexander & myself are bringing tortilla wraps for lunch at work/scool if we have leftovers 🙂
Recipe
Yield: 4 persons
Ingredients:
- 2 packages of tortilla bread
- 500 – 700 grams of chicken breast
- Salt & pepper
- 1 tbsp sweet paprika
- 1 red onion
- 1 bag of grated carrots (Or grate them yourself)
- 1 cucumber
- 4 big tomatoes
- 1 package of little gem lettuce or a big romaine
- 3 avocacos
- 1 lime
- 1 creme fraiche
How to make it:
- Preheat the oven to 100 degrees, ordinary heat
- Heat up a pan
- Dice the chicken breasts v& pour into a freezing bag
- Add olive oil, salt & pepper and paprika
- Mix it well
- Pour the chicken out on the pan, and fry it
- Wash the lettuce and cut it
- Wash cucumber & tomatoes and dice them
- Peelt he red onion, cut it in half & slice it
- Arrange the vegetables in bowls
- Peel the avocado & remove the avocado stone
- Cut the lime into wedges
- Put the avocado meat into a bowl. Mash it with a fork & season with lime juice
- Heat the tortilla bread in the oven (shortly)
- Put a tortilla bread on a plate in front of you
- Spread some creme fraiche on it
- Sprinkle with lettuce, chicken & the rest of the vegetables
- Top with mashed avocado (and maybe a bit more creme fraiche? 😉 )
- Rull it together – Bon appetit
This is how i fold my tortilla:
- Put on the filling, so that it is horizontal in front of you
- The side of the bread, that is nearest you, you fold over the filling, and roll ot under the filling while tighten it
- Fold in the sides, and then continue rolling it together (away from yourself)
