I just love a delicious wok dish. It tastes so good, and it is so healthy.
There is nothing better than getting home from the gym, and then just throw lots of delicious vegetables in your head 😉 ♥
I always add fresh pineapples to my wok dish. It just give it a balance, so that it tastes perfect.
Do not use canned pineapple – It does not taste good, and will not give the same balance. My opinion is, that if you can get fresh vegetables, then use fresh vegetables.
At our home, we all love to eat this – Also my stepson Alexander.
Remember! Always practice your children to eat vegeteables 😉
Recipe
Yield: 4 persons
Ingredients:
- 1 zucchini
- 4 big carrots
- ½ – 1 broccoli
- 1 red onion
- 3 cloves of garlic
- 1 ordinary chili
- 5 cm ginger
- 2 – 3 tsp red currypaste
- 2 – 4 chicken breasts
- 1 fresh corncob or ½ can of good corn (preferably organic & without added sugar)
- 1 fresh pineapple
- 150 grams of sugar snaps
- 1 can of coconut milk (not light)
- Cashew nuts
- Sesame oil
How to make it:
- Dice the garlic
- Peel & grate the ginger (finely)
- Skær hvidløg i skiver
- Finely chop the chili
- Prepare the vegetables:
- Dice the carrots
- Dice zucchini and then cut them into halfes
- Cut the red onions in quarters (or smaller)
- Cut broccoli into small bouquets
- Cut the sugar snaps in halfes
- Peel & dice the pineapple
- Dice the chicken breasts
- Pour sesame oil in a wok or a deep pan
- Add garlic & chili
- Fry for 1 minute or so. Add chicken & ginger
- Fry until the chicken has gotten a nice colour
- Take the chicken, chili, garlic & ginger out of the pan – put aside in a bowl
- Pour some more sesame oil in the wok/pan and add broccoli & carrot
- Fry for about. 3 – 5 minutes
- Add red onions and fry for another 3 minutes (aprox)
- Add zucchini, corn, sugar snaps & pineapple, fry shortly
- Pour some coconut milk in (aprox. 1 dl). Let it simmer, until it gets thick. Rememver to shake the can really good!!
- Add curry paste & mix well
- Ad more – or the rest of the coconut milk
- Add cashew nuts
- Let the coconut milk simmer & become a nice creamy sauce
- When it is creamy, add the chicken & mix it all well
- Done! It is done when the carrots are still a bit crunchy (overcooked vegetables are just the worst)
- Decorate with nice & fresh basil & cilantro & chopped cashew nuts
- Serve with rice (Rememeber to make them in time ;))
⇒ TIP:
This dish are really children friendly, eventhough there is 1 whole chili in it. An ordinary supermaket chili os not very hot at all, when it has been cooked – If you want it hot, you need a stronger chili sort.
If you don’t want the dish to be too hot, then I would recommend you to taste very carefully when you add the red curry paste instead 🙂
