I love this dish.

Recipe
Yield: 4 persons
Ingredients:
- 2 lemons
- 6 big sour (And firm) apples
- 2 red onions
- 1 big bundle of parsley
- 2 fennel
- Olive oil
- 8 cloves of garlic
- 4 thick & nice pork chops
- Parmesan
- Sea salt
How to make it:
- Pre heat the oven to 200 degrees, ordinary oven
- Wash the apples & fennel
- Wash the parsley
- Peel the red onions & garlic
* Cut the big garlics in half - Cut the top & bottom of the fennel (So that all of the layers come apart)
- Slice the fennel – Aprox. ½ cm & then cut each in 2 – 3 pieces
* All fennel pieces should match in size - Cut the apples & red onions in wedges
* The apples pieces should be large. I make 6 – 7 pieces of 1 big apple - Cut one of the lemons in wedges
- Chop the parsley
- Put all the vegetables in a oven proof dish
- Add half of the parsley
- Add olive oil & sea salt
- Mix it well
- Grate ½ lemon on top
- Sprinkle the pork chops with salt & pepper
- Fry them in olive oil on a hot pan – Not for long – They just have to get some nice & delicious brown crips on top. They should not be cooked all the way through
- Place the pork chops on top of the vegetables
- Put in the oven for 30 – 40 minutes
- Take it out of the oven, squeeze the lemons (From the dish) over the pork chops
- Sprinkle with the rest of the chopped parsley, grate (finely) some lemon on top & grate (finely) some parmesan on top of the pork chops
