Delicious old fashion Danish meat balls with stewed cabbage.
I am making this dish a bit more exciting, as I add some oven roasted carrots with grated lemon on top.
This will make the dish a bit more nice & fresh ♥
I do not always love old fashion Danish food – But maybe it’s just because I always got it as child (It was the only thing I was served 😉 )
But, my boyfriend really want us to have more Danish food on the menu at home
Sometimes I make meat balls (I also like rissoles)
Meat balls always works 😉
I also like stewed vegetables haha … Surprise! Stewed cabbage .. Stewed carrots & peas .. Yum!
Recipe
Yield: 4 persons
Ingredients:
Meat balls:
- 400 – 500 grams ground pork & veal
- 1 little/medium yellow onion
- 1 egg
- 2 tbsp oats
- 1 dl milk
- 2 tsk salt
- Pepper
- Nutmeg
- Butter (For frying)
Stewed cabbage:
- 1 little cabbage
- Nutmeg
- Salt & pepper
- 4 tbsp butter
- 4 tbsp flour (Maybe more – There are difference in flour)
- 6 dl milk
Carrots:
- 8 sbig carrots
- 2 tbsp akacie honey
- 2 tbsp olive oil
- 1 lemon
- Sea salt
Other:
- 1 kg baby potatoes
How to make it:
Meat balls:
- Mix the meat with salt in a bowl & stir it
- Peel & chop the onion in a minichopper/foodprocessor
- Mix the meat with onion, egg, oats, milk, finely grated nutmeg & pepper
- Stir until you have a soft meat-mix
- Fry in butter on a pan, for about 6 – 8 minutes
Stewed cabbage:
- Cut the bottom of the cabbage
- Remove the outer leaves
- Cut the cabbage into big chunks (maybe 8 pieces)
- Cook the cabbage in water (Added salt), until it is tender – About 15 minutes
- Slice the cabbage finely & squeeze it free from liquid
- Leave in a bowl, until you are going to use it
- Heat up the butter in a pot
- Turn down the heat (To low/medium)
- When the butter has melted, then take the pot of the heat
- Add the flour & stir it well until it has become a soft mass
- Add 1 dl milk & stir
- When it has become thicker, then add the rest of the milk
- Warm & stir it, until it has thickened
- When the sauce has the right consistency, add the cabbage
- Warm it all together & season with salt, pepper & nutmeg
Carrots:
- Pre heat the oven to 200 degrees, hot air
- Cut the lemon in half (You can roll it before, to release more of the juice)
- Wash the carrots & cut them in half (Vertical)
- Mix honey, olive oil & lemon juice (Aprox. 1 tbsp)
- Put the carrots on a bakingplate, with baking paper on
- Pour the honey/oil mixture on top of the carrots & mix
- Sprinkle with sea salt
- Bake in the oven for 30 minutes
- Take out of the oven & grate (finely) lemon zest on top
Other:
- Wash & cook the potatoes
