Recipe
Yield: 4 persons
Ingredients:
Carrot noodles:
- 3 big carrots
- 15 grams of ginger
- 1/4 – ½ chili
- 3 scallions
- 1 pot of cilantro (the leaves)
- 1 lime
- Rice-noodles for 4 persons
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
Fish cakes:
- 2 packages of ground fish with salmon & cod (800 grams. Homemade or bought)
- 1 can of crab meat
- 3 cloves of garlic
- 1 big red onion
- 2 stalks of lemongrass
- 2 tbsp finely chopped ginger
- 4 kaffir-lime leaves
- 1 tsp harissa
- 1 tbsp finely chopped cilantro stalks
- 1 lime
- Olive oil or sesame oil
How to make it:
Carrot noodles
- Wash the carrots & coarsley grate them
- Peel the ginger & grate it finely
- Mix carrots & ginger
- Wash the scallions, peel of the outher layer & slice
- Wash the chili, remove the seeds (if you wish) & chop
- Chop the cilantro leaves coarsley
- Mix cilantro, chili & scallions in the carrotmix
- squeeze with ½ lime
- Prepare the noodles ad described on the package
- Pour out the water and immediately add sesame oil & sesame seeds. Mix
- Mix well with the carrots & add to a serving bowl
Fish cakes:
- Mix the ground fish meat with the crab meat
- Peel & finley chop red onion & garlic
- Cut top & bottom of the lemongrass & peel off the outher layer
- Chop it finely
- Cut of the cilantrostalks & chop them finely
- Peel the ginger
- Chop the ginger & kaffir lime leaves
- Add red onions, garlic, lemongrass, ginger, kaffir lime leaves, harissa & cilantrostalks to the fish mixture
- Mix it all very well together
- Roll the lime (to release the juice) & squeeze the juice from ½ lime into the mixture – Mix
- Sculp meatballs of the fishmixture with a spoon & fry in lots of sesame oil or butter on a pan

Ja de er tørrede. Du kan købe dem i de fleste supermarkeder. Føtex, Kvickly, brugsen etc. Eller i asiatiske butikker😊
