Yeah, well … We have cookie fever at home – and we try out all kinds of variations 🙂
This time, when I should try aout new tastes i thought ……..

Pecans are delicious, chocolate chips belong in cookies andmarshmallows are delicious!! ♥♥
Why not make cookies with these ingredients? :), so I started making Rocky road inspired cookies 🙂

They was sooo delicious 
The cookies are a bit chewy, but that’s the way I like it – Personally I don’t think cokies should be crunchy.


Recipe

Yield: 20 – 24 cookies

Ingredients:

  • 270 grams of moscvado sugar
  • 1 tsp vanillapowder
  • 2 large eggs
  • 250 grams of flour
  • ½ tsp baking soda
  • Salt
  • 1 big tsp baking powder
  • 1 big tbsp cocoa
  • 75 grams of chocolate chips
  • 70 grams of pecans
  • 70 grams of mini marshmallows
  • 150 grams of soft butter


How to make it:

  • Chop the chocolate
  • Mix eggs, muscvado sugar & vanilla powder well together – It has to become a light & airy mass
  • Add flour, baking soda, baking powder & salt
  • Mix it all well
  • Add the soft butter, chocolate chips, cocoa, pecans & marshmallows
  • Mix it all well
  • Put the bowl in the fridge until the dough has hardened a bit – then it it easier to handle
  • Preheat the oven to 180 degrees
  • Shape the dough into round balls and put them on a bakin plate (with baking paper on)
  • Make sure that there are enough space between the cookie balls, as each cookie will melt and become flat
  • Bake in the oven for aprox. 10 minutter
  • Take the cookies out of the oven and leave them for aprox. 5 minuttes, after this, you move them to a wire rack and let them cool all down
  • Store in tightly closed box with baking sheet in between the cookie layers
