New years eve we got delicious ice cream (sadly not home made – I didn’t have an ice cream machine at that time)
The ice cream was sprinkled with Almond crunch that I had made myself. It was delicious, and my nephew (5 years old) just loved it – and wanted more! He ate 3 portions 😉

Recipe
Yield: 6 persons
Ingredients:
- 100 grams of almonds
- 110 grams of sugar
How to make it:
- Heat up a pan on high heat
- Pour on sugar, and wait for it to melt
- When almost all thesugar has melted – Turn the heat a bit down
- When all of the sugar has melted – Pour on the almonds
- Mix it well together – aprox. 5 minutes
- When all the almonds is covered in sugar – place them on a baking plate (with baking paper on), and let them cool off. They have to be all cooled down
- When the almonds are cold, put them on a cutting board and chop them, the size that you want
→ TIP:
Use a spatula in metal to mix the almonds and the sugar with. It is much easier to get the stiffened sugar off it

Remember that the almonds have to be all cold, before you chop them, or else they are getting to soft

Left-overs are stored in an airtight box. Stored for about 5 days
