I just love red cabbage for my roasted pork & duck 🙂
It is sooo delicious & great for that fat christmas food.
I don’t want that premade supermarkets red cabbage on glass, and the homemade version is just 10 times better.
Yum! I have added a delicious apple, to get some sourness to it 🙂
Recipe
Yield: 6 people
Ingredients:
- ½ red cabbage head (or 1 little)
- 1 big belle de boskoop apple
- 2 red onions
- Butter
- ½ dl dark balsamic vinegar
- ½ dl water
- 1 cinnamon stick
- 2 cloves
- 1 tbsp redcurrant gelly
- Salt + Pepper
- Sugar
How to make it:
- Remove the outher leaves from the cabbage.
- Cut the cabbage in half & remove the stalk
- Cut the cabbage in small strips
- Peel the onions & slice it finely
- Melt 1 tbsp butter in a pot
- Add red cabbage & red onions – Fry until the onions are soft (Stir it)
- Add water, balsamic vinegar, cloves & the cinnamon stick
- Let the red cabbage simmer for 1 hour (stir it once in a while)
- Peel the apple & and dice it
- Add the apples and let them simmer with for aprox. 15 minutes
- Season the red cabbage with sugar, salt & pepper
