Rye bread with potatoes, are underestimated ..
They taste amazing, and they are great for dinner – If it should be a bit more interessting than a piece of rye bread with just some ham on, they are great for lunch with guests & if you have potato leftovers from last nights dinner 🙂
For this rye bread with potatoes, I have mixed my mayo with radishes, pickled red onions & delicious fresh thyme ♥
Recipe
Yield: 4 persons
Ingredients:
- Rye bread
- Potatoes (Min. 8 small potatoes – It is very beautiful with tricolore potatoes)
- Mayonnaise
- Pickled red onions
- Radishes (Min. 10 radishes)
- 1 bundle of fresh thyme
- Salt & pepper
How to make it:
- Make the mayonnaise
- Make the pickled red onions
- Cook the potatoes (Do not overcook them!)
- Pour the water out of the potato pot & leave them to cool off
- Slice the potatoes
- Butter the rye bread
- Slice the radishes & mix with mayonnaise
- Place the sliced potatoes on the bread
- Put on a bit radish-mayonnaise & top with pickled onions, fresh thyme and salt & pepper
