This pasta dish, with oven roasted tomatoes is so great, and it is a dish, that most people would like 🙂
Using oven roasted tomatoes, instead of raw tomatoes, gives the dish an extra touch.
They become so juicy, tasty & sweet.
Recipe
Yield: 4 persons
Ingredients:
- 500 grams of pasta
- Diced bacon (Aprox. 450 grams)
- 1 package of cherrytomater (300 – 500 grams)
- 1 bag of pine nuts (80 grams)
- 2 avocado
- Parmesan
- Olive oil
- Sea salt
- Pesto
How to make it:
- Preheat the oven to 200 degrees, hot air
- Make the pesto
- Grate the parmesan finely & put it in a bowl
- Wash the tomatoes, put them on a baking sheet, with baking paper on, mix with olive oil & sprinkle with sea salt
- Put in the oven for 20 minutes
- Fry the bacon & put the diced bacon in a bowl
- Roast the pine nuts on a dry pan & put them in a bowl
- Cook the pasta
- Peel the avocado & remove the stone
- Dice the avocado & put them in a bowl
- Put the tomatoes in a bowl
- When the pasta is finnish, drain it & mix the pasta with aprox. 4 tbsp of pesto
- Serve the pasta from the pot, together with all the other bowla, so that you can make your own pasta salad
⇒ The pesto can be made days before, you have to use it, so that it is easier to find time to make it 🙂
Just remember always to cover the pesto on top with olive oil
