The summer is gone for now, and the fall has arrived … For good!

Even though the fall is very very cosy – I really miss the summer. We have had a really great summer this year 🙂
I am trying to bring some summer into our little home, by still making this delicious summer-ish dish for dinner.
It is so good, it is so light & it is so easy to make.
I love smoked mackerel, and I remember having it often as little, when I visited my grandparents.
Fish is so delicious! And healthy! Remember that! 😉
Alexander has fallen for smoked mackerel. he loves it. He loves fish in general. Often when we has been at the fish shop, he has asked if he could taste smoked mackerel – So now he has 🙂
This dish is super easy to make.
The mackerel should just be rinsed for bones (and the bones are pretty big – easy!), then you have to make a quick pesto … It takes 5 minutes to make a pesto – And then you have a delicious, homemade, healthy & fresh pesto. Voila!
At last you have to boil some potatoes, and then toss it all together… Who said fast maked dinner? 🙂
It tastes so good! But But But … It does taste better in the summer outside i the garden or on the balcony, eating it in´the sun 😉
Is mackerel healthy?
Mackerel is super healthy. Fish in general is.. But buy some good fish at the fish store!
You should eat much more fish ♥
Mackerel is filled with vitamin-D. Vitamin-D is essential for teh body, and a lot of people has to little of it.
Vitamin-D deficiency cause fatigue & winter depression.
Mackerel is also filled with omega-3 fatty acids & selenium.
→ Actually you should have a weekly intake of mackerel or other fatty fish
** I, myself – Buy my fish the fresh fish department in the store or in a fish shop.
I would rather have a smaller portion, but a great & thick fish, than a thin fish, without any meat or that is pumped with antibiotics. I don’t like the fish (especially mackerel) that lies in the store vacuum packed, for god knows how long.
Recipe
Yield: 4 persons
Ingredients:
- 2 smoked mackerels
- 1 kg small/baby potatoes
- 1 – 2 bundle of radishes
- 1 big package of fresh pea pods (or 1 bag of frozen peas)
- Parmesan
- Pesto
How to make it:
- If you use frozen peas – Thaw the peas
- Make the pesto
- Cut the potatoes in half & boil in salted water (Do not overcook them)
- Wash the radishes & slice them
- Remove the peas from the pods
- Pour out the water from the potato pot & leave the potatoes to cool
- When the potatoes are cold, then mix with pesto & pour them into a serving bowl
- Add the radishes & peas
- Top with a lot of delicious fresh grated parmesan (I use a mandoline iron – 1,5 mm)
- Mackerels:
Take of the meat from the bones, without getting to many bones with you. Put it on a serving plate - Serve together with the potato salad
