Yield: 4 persons
Ingredients:
- 6 carrots
- 15 grams of fresh ginger
- 1/4 – ½ chili
- 3 scallions
- 1 bundle of cilantro (leaves)
- 2 tbsp olive oil
- 1 lime
- 1 handful pumpkin seeds
How to make it:
- Wash & grate the carrots coarsely
- Peel the ginger & grate it finely
- Mix carrots & ginger
- Wash the scallions, peel of the puther layer & dice it finely
- Wash the chili, remove the seeds & dice it finely
- Chop the cilantro leaves
- Add cilantro, chili & scallions to the carrot mixture
- Mix it well together
- Roll the lime (to release the juice) & cut in half
- In a bowl add the lime juice & olive oil. Stir
- Add to the salad & mix it
- Sprinkle with pumpkin seeds
