I love this dish – And so does my man ♥
This is a super duper easy & fast dinner to make,a nd it is also very good for theese warm (very warm) summer days, where you just want some light and delicious for dinner.
I love lemon chicken. The chicken has a fresh & delicious taste of lemon & is really juicy 🙂
I also really love tortellini (I have to try, to make that myself, someday) & pesto .. I love pesto! It’s delicious!
The pesto is besto, if you make it yourself – It tastes of so much more. more fresh & more delicious ♥
⇒ No problem with storing the rest (if you don’t eat it right away)
You should be able to store it for some weeks – If in the fridge & in sealed container. Make sure all of the pesto is covered wit oil all the time 🙂
Recipe
Yield: 4 persons
Ingredients:
- 4 chicken breasts
- 2 lemons
- 2 ½ tbsp honey
- ½ dl olive oil
- 500 grams of good tortellini
- Pesto
Dressing:
- 4 tbsp olive oil
- 1 lemon
- 2 tsp honey mustard
- 1 tsp (with a top) honey
Salad:
- 150 grams of arugula
- 1 kiwi
- Aprox. 4 big bouquets of broccoli
- 2 avocados
- Black sesame seeds / Nigella seeds
How to make it:
- Grate the lemon zest finely
- Add oil, honey & lemon zest to a freezing bag
- Add the chicken breasts to the marinade
- Marinade for min. 30 minutes, in the fridge (prefferably as long as it is possible)
- Preheat the oven to 180 degrees, hot air
- In a ovneproof dish put baking sheet & add the chicken + marinade
- Warm in the oven for aprox. 25 minutes
- Leave them on the kitchen table for 10 minutes to rest
Pasta:
- Make the pesto
- Cook the tortellini as described on the package
- When they are done, you pour out the water amd mix the tortellini with pesto
Dressing:
- Slice the lemon
- I a bowl you add olive oil, mustard & honey. Mix it all very well together – Season with lemon juice
Salad:
- Wash the arugula
- Pour all the arugula into a bowl & add the dressing
- Mix it all very well
- Arrange the rucola in a nice bowl or on a platter
- Peel the kiwi & slice it thinly (1,5 mm) with a mandolin iron
- Add the kiwi to the arugula salad
- Wash the broccoli & cut of 4 bouquetes
- Slive them thinly (1,55 mm) with a manoline iron
- Add the broccoli to the arugula salad
- Peel the avocados & remove the avocado seed
- Slice the avocado thinly and also add these to he salad
- Roast the sesame seeds on a pan & at last sprinkle the sesame seeds on top of the salad
Use a good Tortellini – Not the cheapest ones. They are not good, and they are really small.
I use Tortelini from ‘Giovanni Rana‘. They are really good.
