I love pork chops – Buy some nice thick ones .. Preferrably fre range! 🙂
These pork chops are marinated in soy & honey, that gives the pork chops a nice flavour.
With the pork chops I serve a delicious & healthy couscous salad ♥
The salad is very heakthy & contains hokkaido pumpkin & courgette among other things.
Recipe
Yield: 4 persons
Ingredients:
couscous salad:
- 3 dl couscous
- 1 big courgette
- ½ hokkaido
- 1 lime
- 1 big red onion
- 4 cloves of garlic
- 1 tsp chili flakes
- 1 big bundle of parsley
- 2 handfull spinach
- Olive oil
Pork chops:
- 4 big nice pork chops
- 4 tbsp olive oil
- 2 tbsp soy sauce
- 2 tbsp acacia honey
How to make it:
Couscous salad:
- Heat up a pot with oil
- Prepare the couscous as described on the package & leave to cool
- Wash & shop the parsley & spinach (Add to a bowl & save for later)
- Peel & chop the garlic
- Peel & finley dice the red onion
- Wash & dice the courgette & hokkaido
- Saute garlic, red onon & chili flakes
- Add courgette & hokkaido. Fry for 10 minutes (until they are soft) – Stir once in a while
- Mix with the cold couscous
- Add parsley & spinach
- Roll the lime (to release the juice) & cut it in 4 wedges
- Squeze the juice from ½ – 1 lime in the couscous
- Mix well
Pork chops:
- Add the pork chops to a freezing bag or container with lock
- Add oil, soy & honey
- Mix well & store in the fridge to marinate
* Do this some time prior. Min. ½ hour before you are cooking them - Heat up a pan & fry the pork chops 3 minutes on each side
