It really tastes of something, and are just so delicious 🙂
I just love food like: lime, garlic, chili, ginger & cilantro, and there’s a lot of that in asian food courses 🙂
One of my favourites are Tom Kha Gai… It is a thai soup with chicken, vegetables & coconut milk.
I could eat this soup for dinner everyday… The challenge is just to convince my boyfriend that soup are satiating and can be served as a main course 😉
Recipe
Yield: 4 persons
Ingredients:
- 1 stem lemongrass
- 8 dl chicken stock
- 1 – 1½ tbsp fresh ginger – finely chopped
- 3 chicken breasts
- 3 lime leaves (fresh or dried)
- 3 – 4 scallions
- 1 chili
- 1 can of coconut milk (I use a fat one)
- 1 tbsp fishsauce
- 1 lime
- 1 ½ – 2 ½ tbsp red curry paste
- 200 grams of cherry tomatoes
- 1 package of sugar snaps
- Fresh cilantro
How to make it:
- Cut the lemongrass, and put it in a pot with chicken stock & ginger. bring to the boil
- Cut & core the chili
- Cut the chicken in strips
- Add the chicken, (most of the) chili & lime leaves to the pot
- Let it cook on medium heat for aprox. 5 minutes
- Add coconutmilk, red curry (When you seson with the red curry, take a little bit at a time) & scallions to the pot and let it simmer for 15 minutes or more
- Cut your sugar snaps & cut your tomatoesinto halfs. Add to the pot and let it simmer for 2 minutes
- Season the soup with fishsauce & lime
- Top with lots of delicious cilatro & chili
→ TIP:
Serve with delicious homebaked bred. Eg. baguettes
