I love soup – Homemade soup! not that processed supermaket stuff 😉
My stepson also loves all the soups I have made so far… My man still needs to be convinced though. His opinion is that soup isn’t a main course and it isn’t satiating ..
This tomat soup are really healthy, delicious & easy to make ♥
Serve the soup with delicious homebaked baguette
Recipe
Yield: 4 persons
Ingredients:
- 1 kg of mature cherrytomatoes (stem tomatoes)
- 2 big and mature tomatoes
- 4 cloves of garlic
- 2 red onions
- 4 tbsp dark balsamic vinegar
- 1 bundle of fresh basil
- Salt/pepper
- Olive oil
- 1 chili – if you want
Garnish:
- Creme fraishe
- Fresh basil leaves
How to make it:
- Take of the stem on the cherry tomatoes & dice the big tomatoes.
- Put your tomatoes in ovenproof dish, add some oil & season with salt & pepper
- Slice and core the chili, add it to the tomatoes
- Peel your garlics and lightly mash it with flat side of a kitchen knife
- Add the garlics to the tomatoes and mix it all together
- Bake in the oven for about 15 minutes
- While the tomatoes are in the oven: Peel & dice the onions
- Put a big pot with olive oil over low heat
- Add onions & salt
- Turn it up to medium heat at let the onions get soft. Stir once in a while
- Add 4 tbsp dark balsamic vinegar and let it evaporate
- Take the tomatoes out of the oven and add the tomatoes to the pot and mix it
- Carefully pour it all into a blender
- Add basil to the blender (both leaves & stems)
- Put a lid on the blender, and blend it, to a smooth soup
- Serve with creme fraishe, fresh basil leaves & delicious baguette
⇒ My soup was very orange instead of red.. If you want it more red – all of the tomatoes has to be very red and mature 😉
