Recipe
Yield: 4 persons
Ingredients:
- 2 packs of fresh pasta (500 grams)
- 2 cans of cherrytomatoes
- 1 pot of ffresh basil
- 1 pack of warm smoked salmon (200 – 250 grams)
- 1 tsp ground hot paprika
- 4 cloves of garlic
- 2 big red onions
- Olive oil
- Salt & pepper
- 1 lemon
- Parmesan
How to make it:
- Pick the leaves of the basil
- Peel onion & garlic
- Chop garlic & dice the onion finely
- Take the salmo out of the packaging & dice it coursley (Add to a serving bowl)
- Add some olive oil to a hot pan
- Add onion & garlic. Fry until they are soft
- Add paprika & stir
- Add tomatoes
- Grate the lemon zest finely into the pan
* Leave some zest on the lemon, to grate on top of the dish at serving - Add the juice from ½ lemon
- Prepare the pasta as described on the package
- Mix it all well & leave to simmer for 5 minutes
- Add the basil leaves, mix & simmer for another 5 minutes
- Season with salt & pepper
- Mix the tomatosauce with the pasta
- Top with salmon, lemon zest & finely fresh grated parmesan
