Make a delicious aioli or chili mayo, that can be used as dipping for bean fries or fries, and spread for sandwiches and burgers
In Spain, they use it as dipping for bread as a appetizer.. I always order it, when I am on vaccation on Gran Canaria 😉 love it
Homemade aioli are so delicious, and it is super easy to make ♥
Recipe
Yield: aprox. 2 dl
Ingredients:
- 2 cups of pasteurized egg yolks (4 egg yolks in total)
- Neutral oil (ex. rapeseed oil)
- Salt
- ½ tbsp mustard (dijon)
- Lemon
- 3 cloves of garlic
How to make it:
- Peel and press your garlics
- Pour the egg yolks into a big bowl
- Add mustard & aprox, ½ tbsp lemon juice
- Mix it together with a hand mixer
- Add a bit oil and mix it well
- After .. continue to add the oil while mixing (You have to use a lot of oil, don’t be afraid 😉 )
- The mayo is done when it has got a nice & thick consistency
- Season with salt, lemon juice & garlic
- If the consistency of the mayo are getting thinner beause of the addings, then just add some more oil and mix again
- Voila ♥
⇒ The mayonnaise can be stored in the fridge for max. 1 week
