I love this dish .. It is so delicious 🙂
When I invented it, I had so many apples at home, from my colleagues garden & my boyfrinds parents garden.
I love apples. I was juicing & making baked apples, but they just kept being in my kitchen 🙂
So .. Then I got the idea of making apple balls in the oven, at the size of cherrytomatoes.
I thougt that would be great side dish.
It was so yummy! ♥
Also .. Chicken is always a hit, and I love love love sweet potatoes

I try to make sweet potatoes, as often as I can 🙂
Pesto & chili mayo – So easy to make
Pesto are super easy to make yourself. No reason to buy it, when you can make a delicious & fresh pesto yourselv in 10 minutes 😉 and you can make it days before you are having it.
Same with chili mayo. It is so much better when it is homemade, and it also takes 10 minutes to make.
You can make chili mayo 1 – 2 days before you are having it 🙂

Recipe
Yield: 4 persons
Ingredients:
Sweet potatoes:
- 1500 grams of sweet potatoes
- 4 cloves of garlic
- Olive oil
- Sea salt
Chicken:
- 4 Chicken breasts
- Pesto (Can be made 1 or more days before)
Other:
- 1 bag of pine nuts
- Chili mayo (Can be made 1 – 2 days before)
baked tomatoes & apple balls
- 250 – 500 grams of plum tomatoes (Attached to a stalk)
- 2 big & sour apples
- 10 cloves of garlic
- 1 lemon
- Olive oil
- Sea salt
How to make it:
Sweet potatoes:
- Pre heat the oven to 200 degrees, hot air
- Wash the sweet potatoes & cut them into wedges
- Put them in a freezing bag
- Peel the garlics & press dem
- In the bag with potatoes, add pressed garlic & olive oil
- Leave to marinade. Min. 30 minutes (If it is possible. You can also make the potatoes in the morning, and leave them for the whole day to marinade)
- Divide the poatatoes on a bakking plate, with baking paper on. There should be a little bit of space between each potato wedge
- Sprinkle with sea salt
- Bake in the oven for 20 minutes. Flip the potatoes & bake the potatoes on the other side for 15 minutes
Kylling:
- Pre heat the oven to 180 degrees, hot air
- Put the chicken breasts in a ovenproof dish, with baking paper on
- Spread the chicken on top with lots of delicious pesto & put in the oven
- Warm in the oven for 25 minutes
- Transfer to a plate, and leave to cool for 10 minutes
- On a dry pan, you roast yopur pine nuts. Sprinkle on top of the chicken
Bagte tomater & æblekugler:
- Preheat the oven to 200 degrees, hot air
- Carefully wash the tomatoes (as they are attached to the stalk)
- Put them in a ovenproof dish, with baking paper on
- Wash the aples
- make as many balls from the apples as possible, with a fruit baller
- Put the apple balls in the dish, together with the tomatoes
- Peel the garlic cloves & add to the dish
- Drip some olive oile on the vegetables, and mix carefully
- Grate ½ lemon on top & season with some sea salt
- Place in the oven for aprox. 10 – 12 minutes
- Take it out of the oven, grate the rest of the lemon over the dish & leave for a couple of minutes to cool down
Serve with a delicious chili mayo ♥
⇒ I make the chicken first, and then it can it can stay out and cool off, while the potatoes & vegetables are in the oven
