We often have pizza on fridays the weeks, when we have Alexander
There is nothing better than a homemade pizza, and it is so simple to make a homemade pizzacrust
(and it is worth it all)
It takes minutes to mix a pizza dough together (aprox. 10 minutes), and when it has raised, you just have to roll it out & fill it.
When I make pizza, it takes me 10 minutes to make the dough,before I go to work. Then, I leave it in the bowl, in the fridge or on the kitchen table to raise all day& when I get home I just have to roll out the dough & fill it 🙂 Easy peasy!
There is so much to do with a pizza – It is just your imaginaton that sets the limits! 😉
My newest pizza is a delicious autumn pizza, with great root vegetables & rucola.

Recipe
Yield: 2 pizzas
Ingredients:
Pizza dough:
- 1/4 liter of water
- 500 grams of Manitoba flour or Tipo ’00’ flour
- 15 grams of yeast
- 3 tbsp olive oil
- ½ tsp sugar
- Salt
Pizza
- 5 carrots
- 1 bag of rucola
- 1 lemon
- 1 stor beet
- 1 big sweet potato (Or a package of a couple of smaller sweet potatoes)
- Basil oil
- 1 bag of fresh mozzarella
- Olive oil
- 4 cloves of garlic
How to make it:
Pizza dough:
- Dissolve the yeast in the water and add the other ingredients
- Mix it, and knead the dough very well. The dough has to be firm and elastic. Knead it for min. 10 minutes (I always use my Kenwood kitchen machine)
- Cover the bowl with plastic wrap if it is going in the fridge or just a dish towel if you leave it on the kitchen table
- Let it raise for min. 4 hours or more
Pizza:
- Wash & peel the carrots
- Keep on peeling the carrots (After the peel is off) in long strips
(If you do this some hours before dinner time, then store in cold water) - Wash the rucola
- Pour olive oil in a small bowl. Peel, press the garlics & mix it with the olive oil
- Slice or dice the mozzarella
- When the dough is finish raising – Take it out of the fridge and let it rest (take it out, at least 1 hour before you start making the pizza, so the dough isn’t to hard)
- Pre heat the oven to the highest degrees, your oven can manage – Hot air
- Slice the sweet potatoes & beets on a mandolin iron (if you have one) aprox. 1,5mm thin
- Now .. work with the dough. Roll it and stretch it, so it becomes flat and thin. (use someamount durum flour for rolling the dough out)
- When the doug is thin & flat – place it on a baking paper
- Take the hot baking plate out of the oven, and slide the pizza on baking paper on to the hot baking plate
- Put the garlic oil on the pizza. Then mozzarella, sweet potatoes & beets
- Put in the oven (the bottom shelf)
- Bake the pizza for aprox. 8-10 minutes – Keep an eye on it
- Take the pizza out of the oven. Immediately top the hot pizza with a lot rucola, carrot strips, grated lemon zrst & basil oil

You will always get the best result with a dough, if you use a kitchen machine

I always make the pizza dough in the morning, before work – It takes no time :). Then it will be in the fridge (or just leave it on the kitchen table) to raise all day – And be ready for me when I come home 🙂
