Recipe
Yield: 4 persons
Ingredients:
Dressing:
- 2 tbsp olive oil
- 1 lemon (1 tbsp lemon juice)
- 1 tsp akacia honey
Salad:
- 1 fresh pineapple (aprox. 150 grams)
- 1 bag of arugula (75 grams)
- ½ cucumber
- 10 mint leaves
- 1 bag of pine nuts
How to make it:
Dressing:
- Add olive oil, lemon juice & honey to a bowl
- Mix it well together & store for late
Salad:
- Peel the pineapple & dice 1 of the sides – very small dices (aprox. 150 grams)
- Wash the cucumber & peel it into long & broad bands with a peeler or a mandoline iron (1,5mm)
- Roast the pine nuts
- Add all the mint leaves on top of each other, roll together & slice thinly
- Chop finely
- Mix the pineapple with the mint
- Wash the arugula
- Mix arugula with the dressing & pour into a serving bowl
- Add cucumber & pineapple
- Mix it all & sprinkle with pine nuts
