Recipe
Yield: 20 cookies
Ingredients:
- 125 grams of sugar
- 140 grams of muscvado sugar
- 1/4 tsp vanillapowder
- 1 egg
- 240 grams of flour
- ½ tsp bagning soda
- 1 big tsp bagning powder
- 150 grams of soft butter
- 1 bag of macadamia nuts (65 grams)
- 100 grams of white chocolate chips
- 1 organic lemon
- Sea salt
How to make it:
- Finely grate the lemon
- Chop the nuts (half or quarters)
- To a mixing bowl, add butter, muscvado sugar, sugar & Vanilla power – Mix it all well together
- Add 1 egg & mix it in
- Add fluor, baking soda & baking powder
- Mix it Very well
- Add chocolate chips, nuts & lemon zest
- Mix carefully into the dough with a spatula
- Store in the fridge, untill it has hardened a bit – Min 1/2 hour
- Pre heat the oven to 180 degrees
- Make round balls – 60 grams each from the dough & add to a baking plats, with baking paper on (Remember big space between the cookies, as they will mel)
- Add a little bit of sea salt on each ball
- Bake in the oven aprox. 15 – 17 minutes
- When done, leave shortly to cool a bit down & then transfer (with a spatula) to a oven rack to cool completely
- Store in sealed containere, with baking papers between the layers
